Magnificent Matcha, tofu chco-nut smoothie.




Recipe:
Serves 1 as tall glass (meal replacement), serves 2-small/medium glasses, portioned with a meal.

1 cup almond milk; 1 cup ice;
1/4 cup blueberries
1/2 cup raw (un-roasted) cashews
2 TBSP Honey (not always considered vegan) or Agave, or other sweetener;
2-3 TBSP Matcha green tea powder;
1 container tofu almond dessert (looks like this http://bit.ly/K7RM2t)
1/4 cup Hemp Hearts;
1/4 cup shaved dark chocolate.

Throw everything in the blender. Blend until smooth.Top with more chocolate shavings and hemp hearts.  Enjoy. -Love, Nicole


Notes:
I adapted to what I had at home from what is listed on page 3 of this online article on the 7 New Super Foods (http://bit.ly/IWKKtH) which All Vegan. All Delish. had posted on their FB profile.

I used:
1 cup almond milk;
1 cup ice;
1/4 cup blueberries (they suggested mango, but I am using chocolate too, and I don't think it would taste good, some people like cherries or raspberries with chocolate, just choose what you like);
1/2 cup raw (un-roasted) cashews (or walnuts or whatever you have on hand);
2 TBSP Honey or Agave; 2-3 TBSP Matcha green tea powder;
1 container tofu almond dessert (1/2 of the 2 pack, I used sunrise brand, looks like this (http://bit.ly/K7RM2t Thanks to Calgary Reviewshttp://www.flickr.com/photos/calgaryreviews/ for the photo), which you can get at SuperStore in Halifax, NS I found it in the deli section where other tofu and meat substitutes are found);
1/4 cup Hemp Hearts;
1/4 cup shaved dark chocolate.

Method:
Blend until smooth. Top with more chocolate shavings and hemp hearts. Enjoy

Quinoa Burgers






Ingredients


2 cups of Quinoa


1 cup of shredded cheese (medium cheddar)


1/2 cup cottage cheese


1 cup of shredded carrot


3 medium sized eggs


1 tsp of minced garlic


1tbsp olive oil


dash of S&P


1 finely chopped green onion


dash of white sugar





Directions


Bring 4 cups of water to a boil in medium saucepan


Add Quinoa


dash of Salt


Boil 15-20 mins until desired consistency





Remove cooked Quinoa from saucepan and place into mixing bowl


In mixing bowl, add all ingredients


Form mixture into patties (1/2 inch thick)





add olive oil to heated frying pan


Fry Quinoa patties for approx 3-4 mins on each side

Garnish with your choice of toppings


Suggested: Tzatziki or hummus or guacamole in a pita or kaiser roll

Curried Carrot Soup






Ingredients





1 & 1/2 pounds of carrots


1tbsp chopped garlic


1tbsp of olive oil


1 can coconut milk


Dash of S&P


1 medium sized onion


3 tsp of curry


1 package of onion soup mix


6 cups of waters


1 cup of plain yogurt (optional)





Directions


Peel and chop carrots (1/8 inch thick)


Add carrots, onions, olive oil, curry, garlic, salt and pepper in a medium saucepan


cook on medium heat for 20 minutes


add in water and soup mix and cook until carrots have softened


Puree with hand blender


Add coconut milk


Add plain yogurt (optional)





*Garnish as desired
